Mediterranean fish dish with nutty pesto

4 fish fillets of your choice, I used frozen cod fillets
500 grams of new potatoes or sweet potatoes
Zest and juice of 1 lemon
Half a tin or jar of pitted olives
250 grams of cherry tomatoes
Olive oil
Oven 180c

Scrub and chop your potatoes, leaving the skin on for added fibre. If using sweet ones par boil for 5 mins and new potatoes 10mins. Drain and add to a rectangle dish, add some olive oil to prevent sticking.
Add the tomatoes, you can half them if you prefer and sprinkle in the olives.
Place the fish fillets on top and zest over the whole dish with the lemon and pour over the lemon juice. Add a spoon of the nutty pesto to each fillet and spread out slightly.
Cover with foil and place in the oven for 15mins, then remove foil and place back in the oven for another 10mins.
If using fresh fish, it will take a little less time, so I would suggest putting the veg in first for 10 to 15 mins and then adding the fish.
Serve with some steamed broccoli or greens of your choice.
