Buckwheat & Apple Pancake Recipe (Gluten Free)

This is a Gluten Free recipe for Buckwheat Apple Pancakes.
Serves 2
 
Ingredients
1 tsp GF baking powder
40 g buckwheat flour
½ tsp Vanilla extract
40 ml milk of your choice, I use almond milk
1 egg
1 apple grated or cubed (ideally organic)
Handful of blueberries if you have them
1 tsp coconut oil or oil of your choice
 
Method
Add flour, baking powder to a bowl. Mix the egg, milk, and vanilla and add to the dry ingredients. Mix in the apple and add the blueberries if using. Add a little more milk if too thick but this recipe will make American style pancakes. Melt a little coconut oil and add a serving spoon or ladleful of the mixture to the pan. When the pancake bubbles on top, flip it over and cook for a couple more minutes. Repeat to make 4 to 6 pancakes.
 
Serve with some natural yogurt or kefir, fruit, nut, seeds and a drizzle of maple syrup or honey.
