This recipe will make enough of this tasty granola to fill one large kilner jar.
Ingredients:
- 225g oats
- 100g buckwheat
- 100g coconut flakes
- 50g pumpkin seeds
- 50g sunflower seeds
- 100g pecans
- 100g walnuts
- 4 tbsps light olive oil or coconut oil
- 6 tsps ground ginger
- 4 tsps ground cinnamon
- 2 tsps vanilla extract
- 4 tsps honey or maple syrup
- 50g goji berries
Preheat the oven to 180C fan 350F or gas 4
Mix together the oats, pumpkin seeds, sunflower seeds, coconut flakes, almonds and walnuts.
Place the oil, ginger, cinnamon, vanilla, honey/maple syrup in a small pan to melt. It will be very quick! Pour into the dry ingredients and mix well together.
Line a baking tray with lining paper and spread out the mixture on the tray, then place in the oven
Place in the oven for 10 min. Then give it a stir and pop it back in for another 5 mins if you would like it more roasted.
Take out of the oven and then sprinkle with goji berries. Add the lid and place in an airtight container. This will last for a couple of weeks.
Enjoy with natural yoghurt, kefir or milk of your choice and sprinkle with flaxseeds, chia seeds and fruit..

- Quinoa flakes – these are a great alternative to oats.
- Sesame seeds
- Cocoa nibs – sprinkle these on after cooking for a chocolately taste
- Cocoa – add a teaspoon in when you melt your honey, oil and spices for a chocolate flavour
