5 parsnips chopped into chunks
1 apple chopped into chunks
1 litre of chicken stock
200 mls almond milk or milk of your choice
Salt and pepper to season
I used a soup maker for this which is a great piece of kitchen equipment. Add the chopped ingredients to the jug, pour in the stock and milk. Switch on and it will blitz and heat the soup in twenty minutes and then keep it warm for about an hour depending on which soup maker you have.
If using the pan method, add some olive oil and add the parsnips along with the apple chunks and cook gently for five minutes. Pour in the stock and simmer for twenty minutes, pour in the milk and season with the salt and pepper to taste. Blend the soup using a stick blender or kitchen processor and enjoy!
